Abstract
Fish is a food ingredient that has high nutritional content and is widely consumed by the community. The level of utilization of catfish in the community is not yet optimal, it is still limited in the form of traditional preparations and fresh consumption so that its economic value is not maximized. Diversification of fisheries products can increase the value added of fish and optimize the utilization of fish resources. The target audience for this community service activity is PKK Simpang 4 Sipin, Telanai Pura District, Jambi Province. Community service activities are carried out using lecture and discussion methods. During the activity the participants enthusiastically participated in and discussed the processing of fishery products based on zero waste. This service activity explained several important points, namely the nutritional content of cathfish fish which includes protein, fat, omega-3, omega-6, essential amino acids, EPA, DHA, calcium, phosphorus, potassium, vitamins and iron. Beside that, other important points explained are the benefits of consuming fish and diversification of processed catfish based on zero waste. Processed products that can be produced from catfish include catfish skin chips, catfish skin collagen, calcium-rich flour from catfish bones, silage from catfish viscera, fish smoked, nuggets, sausages and meatballs.
