Abstract

Batanghari Regency is one of the regencies in Jambi Province. Batanghari Regency has quite large catfish potential. The processing of smoked catfish used by the community is still traditional smoking using a burning method that produces smoke. Traditional smoked fish products are less uniform and high in PAH. Therefore, it is necessary to make smoked catfish using liquid smoke in the Dasawisma Melati Putih Group, Rengas Condong, Muara Bulian. The purpose of the community service to improve the knowledge and skills of the Dasawisma Melati Putih Group members. The community service carried out in the Dasawisma Melati Putih Group was attended by members of the Dasawisma Melati Putih Group, lecturers, and students of Fishery Product Technology. The first session was an opening by the Fishery Product Technology Study Program and the Head of the Dasawisma Melati Putih Group. The next session was a presentation of Liquid Smoke Technology material by a team of lecturers who explained the meaning of Liquid Smoke Technology, its advantages and disadvantages, and the manufacturing process. The next session was a demonstration on making smoked catfish using liquid smoke. The activity ran smoothly and with enthusiasm. During the discussion session, the women from the Dasawisma Group were enthusiastic and asked further questions. After participating in this activity, the women from the Melati Putih Dasawisma Group gained increased knowledge and skills in the process of making smoked catfish using liquid smoke.
